Well, unfortunately, my husband likes to eat completely different than I do. Which makes it hard to come up with dinners that we both like! I like mostly veggies and little meat...he is the opposite! This makes for some interesting "casseroles." Now, with baby here, it makes it even harder, as I do not want the baby eating meat. (or at least not eating a lot of meat) Anyway...here is my husband's favorite casserole, totally anti me and my organic and nothing from a box ways...but whatev's...it actually tastes good. In that comfort kind of way!
2 cans tomato bisque
2 cans creamed corn
1 can tomate sauce
1 can tomato paste
1 can diced mexican tomatoes
1 can olives
3 diced bell peppers
2 box sliced italian mushrooms
1 lb ground turkey
1 red onion 1 bag egg noodles
Shredded cheddar
Heat oven to 350, cook onion, mushrooms, bell peppers in olive oil until soft. Put egg noodles (raw) on bottom of casserole pan. Add met to sautee pan, brown, but do not cook fully. Throw in all cans of everything else, mix it up and throw on top of noodles in casserole pan. Give a quick stir, top with cheese and cover with foil, bake for 55 minutes. Voila! A totally unhealthy meal for husbands. I revised this recipe from his moms, adding more veggies and subbing turkey for beef. That helps make it edible for me. =)

Hello! My first Blog!
Hello everyone! I cannot figure out how to update my descriptions, about me, or anything else, so I supposed I will just type up my first blog. Blog, blog! Blog, blog! (just kidding)
I am a first time mommy, and a full time working one at that! Which makes my life hard, but very busy. My baby's name is Cash Edward and he is probably the cutest baby around. We are hoping to add to our family in 2012, so stay tuned! Apparently I am not allowed to get too excited about it, because that throws of my body and stresses me out, hence, doctor visits and co-pays for nothing that is really wrong, besides me and my body being a total spazz. Rant over.
Lent just started yesterday! I gave up candy, mostly for Jesus and all, but also because I want to lose weight. Clearly the treadmill isn't cutting it, so deprivation is my next step. If I have to see one more pic of Jessica Alba's post baby body, I will throw up, or send her hate mail. I have not decided yet.
In happier news, Cashew-nut just started sleeping through the night, on Sunday! Only took him almost ten months, but we will take it! He now goes to bed at 8 and wakes up around 5-6. Thank GOD!!! I was starting to be convinced that only stay at home moms get babies that sleep through the night, and us working moms get punished by our babies by staying up all night long. This theory might be wrong though, as I only really know about 2 moms that work.
So, as you can see, I have some lofty goals, lose about 15 pounds before the next pregnancy, and calm down enough to actually get pregnant. Oh, and I would like to find a fudge recipe that I actually like (this doesn't really go hand in hand with my last goal, now does it?) So, say a prayer for us crazy Hoffmans, and I will reward you with fudge. =)
